  1. 2 egg yolks
  2. 1/4 teaspoon salt
  3. 2 teaspoon lemon juice
  4. 1/8 teaspoon cayenne pepper
  5. 1/4 cup unsalted butter melted
  6. Chopped parsley for garnish

How To Prepare :

First Preheat the oven to 325F. Follow the instructions for the almond flour pie crust and press into the bottom sides and up sides of a ceramic pie dish. then Bake 12 minutes. Remove the crust from the oven and arrange the chopped bacon over the bottom of the crust. In a  bowl, whisk together the eggs, cream, garlic, salt, and pepper. then Pour over the bacon. Bake 30 to 40 minutes, or until the quiche barely set in the center. Remove it and let it cool while preparing the Hollandaise.

To prepare the Hollandaise:

First Place egg yolks, lemon juice, and salt in the blender jar. Blend on high for 15 seconds. then after that Remove the blender lid insert and put a small funnel with a narrow stem into the hole.   6. 1/4 cup heavy cream
  7. 1 California Avocado thinly sliced
  8. 1 cup 6 large eggs
  9. Monterey Jack cheese shredded
  10. 1 green onion thinly sliced
  11. Salsa, additional cheese, sour cream, etc for serving

Instructions :

First, Grease a 7-inch diameter casserole dish. then turn the instant pot to the sauté function and add the avocado oil. when it is hot, add the bulk sausage then break it up with a spoon. Cook it for about 4 min or until most of the pink is gone. after that Add the garlic, grated broccoli stalks, salt, and pepper. then cook for another 2 min or until the broccoli is tender. then put the mixture into the prepared baking dish.
In a bowl (medium), whisk together all those ingredients (eggs and cream) until well combined. then Stir them in the cheese and the green onion. after that Pour them over the sausage mixture in the pan. then Cover the dish with aluminum foil.
Pour a cup of water ( 1 cup) in the bottom of the Instant Pot. add the trivet. then put the dish on top of the trivet and lock the lid. don't forget to Make sure that the vent is closed. Set the stove to manual pressure for 35 minutes..  after that when the cooking is complete, let the pressure release (naturally) for 10 minutes. Then vent it until the pressure is gone. after that Remove the dish from the Instant Pot.

Bake it for about 15 to 18 minutes, until omelet is cooked. then Remove and sprinkle it with a cup of the cheddar cheese. Sprinkle it with sliced sausage.
in the end, roll the omelet up tightly. Use the parchment paper to help you lift and roll the omelet. then Sprinkle it with the remaining cheddar and bake it for another 5 minutes, until cheese is melted. then serve!
