Ingredients:


  1. 1/2 zucchini, medium size
  2. 1 red bell pepper, large
  3.  1 onion pepper, large
  4.  3 tablespoons olive oil
  5.  Salt and Pepper
  6.  1/2 lbs peeled jumbo shrimp
  7.  2-3 cloves garlic, minced
  8.  1/2 teaspoon paprika
  9.  1/2 teaspoon chopped parsley
  10.  1/2 tbsp chopped coriander
  11.  1/2 tbsp lemon juice


How to prepare :

Heat the oven at 475 degrees and place it in a baking tray lined with butter paper in the oven until it  slightly heated.

Season the vegetables with a tablespoon of olive oil, salt and pepper.

In another bowl, put the peeled shrimp and add garlic, herbs and paprika and 1/2 teaspoon olive oil, lemon juice, salt and pepper.

Stir the shrimp with the spices well.

Spread the vegetables in the tray on hot paper.

Put the tray in the preheated oven for 10 - 15 minutes and  stir the vegetables.

Set the vegetables aside and cover it  to keep them warm.

Put the tray in the oven for 3 - 5 minutes.
