Strawberry Short Cake

Strawberry Shortcake:

  1. Non-stick vegetable spray
  2.  1 cup flour cake
  3. 1 teaspoon baking powder
  4. 1 teaspoon salt
  5. ¾ cup milk
  6. 3 tbsp unsalted butter
  7. 1 tablespoon vanilla extract
  8. 1 teaspoon lemon extract
  9. 3 large eggs
  10.  1 cup sugar
  11. 2 fresh strawberries

Whipping cream frosting:

  1. 1 teaspoon gelatin
  2. 2 cups heavy cream
  3. ½ cup sugar confectionery
  4. 2 teaspoons vanilla extract

Strawberry Shortcake:

  1. Heat the oven to 350 degrees and put a rack in the middle of the oven. 
  2. Grease 2 cake molds (9 inches) with vegetable spray. 
  3. Brush the bottom of each mold with a circular piece paper.
  4. In a large bowl, sift the flour with baking powder and salt together, 3 times. 
  5. In a small saucepan, heat the milk and butter until they boiling. 
  6. Remove them from the heat and add vanilla and lemon extract.
  7.  In a separate mixing bowl, whisk the eggs and sugar until the mixture is pale yellow, has a soft texture and doubles in size.
  8. While whisking, add the hot milk mixture. 
  9. Add the flour mixture with stirring. 
  10. Spread the mixture over the prepared cake molds and bake for 15 minutes, or until it becomes golden, until the middle of the cake bounces back when pressed gently with the finger, and until you experience the maturity of the cake with toothpaste and come out clean. 
  11. Place the molds on cooled shelves to cool. 
  12. Slide the knife head around the sides of the cake to make it easier when you try to remove it from the mold.

For whipped cream: 

  1. In a medium bowl, mix the gelatin with ¼ cup cream. Let it rest for 5 minutes, then place the bowl over hot water until the gelatin is completely dissolved. 
  2. Remove it  from heat and let cool until it  tepid.
  3. During this time, in the mixing bowl, whisk the cream until it becomes a little thick. 
  4. Add sugar and vanilla and whisk them until become smooth.
  5. Pour ½ cup whipped cream into the gelatin mixture, then add the rest and continue whisking.
  6. Wash the strawberries and dry them. 
  7. Choose the best 12 pills, then remove the remaining stems and cut them into strips. 
  8. Place the strawberry slices on one of the cake molds, and then spread a layer of ½ inch thick whipped cream over it. 
  9. Put the other cake mold over the cream. 
  10. Spread the remaining whipped cream on the entire cake. 
  11. Decorate the face with whole strawberries.
